Lorraine's Graham Cracker Pudding
A no-bake layered icebox dessert of graham crackers, vanilla and chocolate pudding, peanut butter, and Cool Whip, chilled until the crackers soften.

Ingredients
- 1 box graham crackers
- 2 boxes vanilla pudding (large, 5.1 oz each)
- 1 box chocolate pudding (small, 3.9 oz)
- 1 jar peanut butter
- 1 package softened Cool Whip (8 oz)
Method
- Prepare the puddings according to package instructions. Prepare the vanilla pudding and set aside.
- Prepare the chocolate pudding.
- Spread peanut butter on the graham crackers. Place the first layer of graham cracker/peanut butter on the bottom of a 9x13 pan (peanut butter side up).
- Spread ⅓ of the vanilla pudding on top of that.
- Spread a layer of Cool Whip (works best if soft) on top of the vanilla pudding.
- Continue layering in order as above.
- Layer until there's just enough room to spread chocolate pudding on top as a finish (use chocolate pudding to top the dessert only).
- Crush the remaining graham crackers. Sprinkle them over the chocolate pudding for garnish.
- Refrigerate 1-2 hours or until the graham crackers are soft.
Notes
- Memere doesn't add peanut butter.
- You can use any flavor graham cracker and any flavor pudding you wish. Cinnamon crackers with cream cheese pudding is great.
- You can also make the puddings from scratch if you prefer, but that requires more effort and time — this is the quick version.
