Kale Potato Sausage Soup
A hearty soup of crumbled Italian sausage, potatoes, and kale in a lightly creamy broth.

Ingredients
- 1 lb mild Italian sausage (casing removed)
- 1½ tablespoons vegetable oil
- 1 small onion, diced
- 2 garlic cloves, pressed
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste (about 1 teaspoon salt and ¼ teaspoon black pepper)
- 1 lb small new potatoes or red potatoes, diced
- 6 cups chicken broth (or water and chicken bouillon)
- 1 bunch of kale, washed and chopped
- ¼ cup heavy cream (optional)
Method
- In a deep pot, heat the oil over medium heat.
- Add the sausage. Cook for 5 minutes, until brown, stirring frequently to crumble it while it cooks.
- Add the onion and garlic, stir to combine. Add the oregano, red pepper flakes, salt, and pepper. Cook for 3-4 minutes, stirring frequently.
- Add the chicken stock and bring the soup to a boil. Add the potatoes. Cook for 10-15 minutes, until the potatoes are fully cooked.
- Add the kale and cook for 2 more minutes, then add the cream. Stir.
- Add more salt and pepper if needed.
- Serve hot.
