Jamie's Taco Stuffed Tomatoes
Hollowed beefsteak tomatoes stuffed with seasoned taco beef and cheese, finished with a thick layer of melty Mexican cheese, sour cream, and lettuce — a fresh, low-carb take on tacos.

Ingredients
- 2 beefsteak tomatoes
- ¼ lb ground beef
- Taco seasoning (1 packet or to taste)
- Cumin, to taste
- Mexican shredded cheese
- Sour cream
- Lettuce, shredded
Method
- Cut a circle out of the top of each tomato and scoop out the filling to make a cup.
- Brown the ground beef in a skillet, draining excess grease. Season with taco seasoning and cumin (add a splash of water and simmer until thickened).
- Stuff the hollowed tomatoes with the taco beef, layering in shredded Mexican cheese as you go.
- Top each tomato with a thick coating of shredded Mexican cheese and melt until gooey (broil, bake, or microwave a few minutes).
- Finish with sour cream and shredded lettuce. Serve.
