Jamie's Taco Stuffed Tomatoes

Hollowed beefsteak tomatoes stuffed with seasoned taco beef and cheese, finished with a thick layer of melty Mexican cheese, sour cream, and lettuce — a fresh, low-carb take on tacos.

Jamie's Taco Stuffed Tomatoes

Ingredients

  • 2 beefsteak tomatoes
  • ¼ lb ground beef
  • Taco seasoning (1 packet or to taste)
  • Cumin, to taste
  • Mexican shredded cheese
  • Sour cream
  • Lettuce, shredded

Method

  1. Cut a circle out of the top of each tomato and scoop out the filling to make a cup.
  2. Brown the ground beef in a skillet, draining excess grease. Season with taco seasoning and cumin (add a splash of water and simmer until thickened).
  3. Stuff the hollowed tomatoes with the taco beef, layering in shredded Mexican cheese as you go.
  4. Top each tomato with a thick coating of shredded Mexican cheese and melt until gooey (broil, bake, or microwave a few minutes).
  5. Finish with sour cream and shredded lettuce. Serve.
