Jamie's Paneras Squash Soup

Seared cubed chicken thigh and tender pearl onions stirred into Panera's Autumn Squash Soup, seasoned with garlic and rosemary. Served with buttered scali bread.

Jamie's Paneras Squash Soup

Ingredients

  • 1 tub frozen Panera Autumn Squash Soup
  • 1 large chicken thigh
  • 1 can or bag pearl onions
  • Garlic, minced (to taste)
  • Rosemary (1 sprig or to taste)
  • Olive oil, for searing
  • Salt and pepper, to taste
  • Scali bread, buttered, for serving

Method

  1. Heat the soup in a medium saucepan.
  2. Cut the chicken thigh into cubes, removing some of the fat — keep the fat.
  3. In a frying pan, sear the chicken in olive oil with salt, pepper, garlic, the pearl onions, and the separated chicken fat. Sear until the chicken has a slight char on the outside and is cooked through, and the onions are tender.
  4. Season the soup with salt, pepper, garlic, and rosemary. Once hot, add the chicken and onions, leaving the fat behind in the pan.
  5. Serve with buttered scali bread.
