Denise's Saltine Toffee Cookies

Addictive saltine cracker toffee — crackers under a boiled brown-sugar-butter toffee, topped with melted chocolate and pecans, then broken into pieces.

Denise's Saltine Toffee Cookies

Ingredients

  • 4 ounces saltine crackers
  • 1 cup butter
  • 1 cup dark brown sugar
  • 2 cups semisweet chocolate chips
  • ¾ cup chopped pecans

Method

  1. Preheat oven to 400°F (205°C).
  2. Line a cookie sheet with saltine crackers in a single layer.
  3. In a saucepan, combine the sugar and butter. Bring to a boil and boil for 3 minutes. Immediately pour over the saltines and spread to cover the crackers completely.
  4. Bake at 400°F (205°C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread the melted chocolate and top with chopped nuts. Cool completely and break into pieces.
