Denise's take on the layered no-bake icebox dessert: a pecan shortbread crust, sweetened peanut-butter cream cheese, vanilla and chocolate pudding, and Cool Whip, finished with nuts and chocolate.

Ingredients

  • ½–1 cup butter
  • 1½ cups flour
  • 1 cup pecans, chopped
  • 1 large package cream cheese
  • 1 cup confectioners' sugar
  • 1 cup peanut butter
  • 1 (3½ ounce) box vanilla pudding mix
  • 1 (3½ ounce) box chocolate pudding mix
  • 3 cups milk
  • 1 cup Cool Whip, plus additional for topping
  • Nuts and chocolate, for garnish

Method

  1. Melt butter; mix with flour and press into a baking pan.
  2. Pour pecans over and press down.
  3. Bake 15 minutes at 350°F. Cool.
  4. Mix cream cheese with confectioners' sugar and peanut butter. Mix well, then pour over the crust.
  5. Mix vanilla and chocolate pudding mixes with the milk and Cool Whip. Beat well. Pour over the peanut butter layer.
  6. Garnish with additional Cool Whip. Sprinkle with nuts and chocolate as desired.
