Denise's Haddock & Broccoli Casserole

A comforting baked haddock casserole layered over rice and broccoli with Muenster cheese and a buttery Ritz cracker crumb topping.

Denise's Haddock & Broccoli Casserole

Ingredients

  • 2 lb. haddock
  • 2 tbsp. lemon juice
  • ¼ c. melted butter
  • 8–10 slices Muenster cheese
  • Salt & pepper
  • Rice (cooked, amount to taste)
  • 1 bag frozen broccoli

Crumb Topping

  • Ritz crackers, crushed
  • ¼ c. melted butter

Method

  1. Cook the rice. Add rice and frozen broccoli to a 9x13 casserole dish. Lay cheese on top, then lay the fish on top. Lay the cracker crumb on top and pour over the melted butter.
  2. Bake at 350°F for 40 minutes, removing the tin foil for the last 20 minutes or so.
