Denise's Haddock & Broccoli Casserole
A comforting baked haddock casserole layered over rice and broccoli with Muenster cheese and a buttery Ritz cracker crumb topping.

Ingredients
- 2 lb. haddock
- 2 tbsp. lemon juice
- ¼ c. melted butter
- 8–10 slices Muenster cheese
- Salt & pepper
- Rice (cooked, amount to taste)
- 1 bag frozen broccoli
Crumb Topping
- Ritz crackers, crushed
- ¼ c. melted butter
Method
- Cook the rice. Add rice and frozen broccoli to a 9x13 casserole dish. Lay cheese on top, then lay the fish on top. Lay the cracker crumb on top and pour over the melted butter.
- Bake at 350°F for 40 minutes, removing the tin foil for the last 20 minutes or so.
