Blueberry Tarts for Two

Two individual almond-flour shortbread tart shells filled with sweetened mascarpone and piled with fresh blueberries — a simple, elegant dessert.

Blueberry Tarts for Two

Ingredients

  • ¼ cup almond flour (super fine)
  • ½ cup all-purpose flour
  • 3 tablespoons sugar
  • ⅛ teaspoon salt
  • 4 tablespoons butter (melted but not hot)
  • 1 large egg yolk
  • 8 ounces mascarpone cheese
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar
  • Fresh blueberries

Method

  1. In a mixing bowl, whisk together the almond flour, all-purpose flour, sugar, and salt.
  2. Add the melted butter and egg yolk to the flour mixture. Whisk until a loose dough ball forms.
  3. Press the dough into two greased tart pans, making an even layer lining each pan. Poke holes in the bottom of the dough with a fork.
  4. Bake at 350°F for 15–18 minutes, or until the edges begin to brown. Allow to cool fully before removing from the pans.
  5. Mix together the mascarpone, powdered sugar, and vanilla extract. Fill each tart with the sweet cheese and top with fresh blueberries. Enjoy!
