Blueberry Tarts for Two
Two individual almond-flour shortbread tart shells filled with sweetened mascarpone and piled with fresh blueberries — a simple, elegant dessert.

Ingredients
- ¼ cup almond flour (super fine)
- ½ cup all-purpose flour
- 3 tablespoons sugar
- ⅛ teaspoon salt
- 4 tablespoons butter (melted but not hot)
- 1 large egg yolk
- 8 ounces mascarpone cheese
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
- Fresh blueberries
Method
- In a mixing bowl, whisk together the almond flour, all-purpose flour, sugar, and salt.
- Add the melted butter and egg yolk to the flour mixture. Whisk until a loose dough ball forms.
- Press the dough into two greased tart pans, making an even layer lining each pan. Poke holes in the bottom of the dough with a fork.
- Bake at 350°F for 15–18 minutes, or until the edges begin to brown. Allow to cool fully before removing from the pans.
- Mix together the mascarpone, powdered sugar, and vanilla extract. Fill each tart with the sweet cheese and top with fresh blueberries. Enjoy!
